Mr. Everything

If you went to school in the Atlanta University Center, this post will be a quick trip down memory lane. The rest of you should be prepared to be amazed. In the heart of the AUC on MLK Drive is a wonderful place called Mr. Everything Cafe. Since we are only 847 miles away, my husband decided to recreate our favorite dish from one of our favorite places. It's Chicken over Yellow Rice topped with EVERYTHING. (Hence the name) He made the first delicious round and then I took to the kitchen a few weeks later to recreate and photograph just for you! Let us begin...

You need the following + 2 boneless chicken breast

Let rice start cooking first. I use a rice cooker. For stove top cooking follow directions on bag.

Next let broccoli steam while cooking the rest of EVERYTHING
(You can also use spinach, corn, kale, or any other veggies you like)

Season and slice your chicken
(Yes there are four chicken breast here. I was prepping for dinner later in the week. Ignore additional two pieces)

I use a little bit of EVERYTHING for seasoning on this dish. Lawry's, Tony Chachere's Famous Creole Seasoning, Some Seasoning my mom found, Salt, Pepper, Garlic Powder and Oregano.

Thin slices

Pour out about 2 seconds of oil. No really Count 1, 2, stop pouring...

Add chicken to medium to low heated oil
Stir occasionally

Check Your Broccoli. Once tender, remove from heat and sit aside.

While Chicken is cooking slice peppers and onions

Stir Chicken. Once chicken is done, remove from heat and pat with paper towel. Then put peppers, onions, chicken, a dash of oregano and 1 second worth of oil in wok (or other large pan) and cook for about 5 minutes on medium-hi heat. Do not over cook veggies, you don't want them mushy.

Toss in pan if your talented or just stir quickly. Then remove from heat.

Place a blanket of yellow rice on plate and add EVERYTHING and cover with a sprinkle of cheddar cheese.

Then sit and eat EVERYTHING off your plate.

The Spicy Lens Version of Mr. Everything Yellow Rice and Chicken Recipe









Prep Time: 20 Minutes Cook Time: 1 hour
Difficulty: Easy Servings: 2

Ingredients


  • 2 boneless chicken breast

  • 1 10oz pack of yellow rice

  • Lawry’s, Tony Chachere’s Famous Creole Seasoning, Salt, Pepper and Garlic Powder (whatever else you like)

  • 3 Tablespoons Olive Oil

  • 1 cup of Broccoli

  • 1 Red Pepper

  • 1 Green Pepper

  • 1 small Red Onion

  • 1 dash of Oregano

  • 1/4 cup of cheddar cheese


Preparation Instructions

Cook Rice in Rice Cooker or Follow Directions on Pack

Steam Broccoli for 8min or longer until tender.


Season Chicken Breast with Lawry’s, Tony Chachere’s Famous Creole Seasoning, Salt, Pepper, Garlic Powder.

Slice Chicken.


Heat 2 tablespoons of oil in a large pan over medium-high heat. Add sliced chicken and cook until done. Remove chicken from pan.

Place onions, peppers, chicken in wok. Add 1 tablespoon of oil and stir. Add Oregano . Stir until veggies are tender. Not Mushy!


Add steamed broccoli.


Remove from heat.

Place Rice on plate and add onions, peppers, chicken and broccoli. Garnish with cheese and eat!
